Friday night's Friends of the Baldwin Public Library used book sale is one of my favorite events of the year. Not only do I feel quite priviledged to attend on "member's night", I feel totally honored to be browsing alongside of Birmingham's finest book nerds. A self dubbed book nerd myself, there is nothing like scouring through thousands of hard and soft cover books ferreting the perfect find!
I landed a few great cookbooks and was fortunate enough to find an ol fave, the Moosewood Cookbook. Never heard of it? Well, it was groundbreaking in the year 1977 when it was first published. The author, Mollie Katzen is responsible for bringing healthy vegetarian cooking, at that time on the fringe, into the mainstream. The cookbook has been recognized as one of the top 10 cookbooks of all time! Way to go Mollie!! The recipes have changed over the years to become more natural, with fewer fats and calories. But still tasty and easy. For me, cooking from this cookbook is a walk down memory lane, my first copy which I aquired in the 80's has since been lost and probably made its way to some thrift store bookshelf.
So here is the recipe..... Broccoli-Mushroom Noodle Casserole. It is not the prettiest casserole in the oven, but hey you can't judge taste by it's looks, right? It yielded a heafty portion of food, enough for two casserole dishes. One for the week and one to freeze! Perfect. Check out Mollie's website at www.molliekatzen.com . I am looking forward to trying recipes from the Italian cookbooks I purchased as well. Hummmm, what should I try first?
